Paula’s Recipes: Bacon Cheeseburger Puffs

I brought these into work today. I use my fellow employees as guinea pigs, if they eat what I made I know you will like it too. Here’s the recipe..

 

BACON CHEESEBURGER PUFFS

Ingredients

1/2 pound ground beef

4 strips of thick bacon cooked and crumbled

2 cups of shredded cheddar cheese

1 1/2 cups of biscuit/baking mix

6 to 7 tablespoons of buttermilk

Optional…..salt to taste and red pepper flakes to your liking.

Directions

Preheat oven to 400

In a skillet, cook and crumble ground beef until no longer pink. Drain.

Cook bacon crisp, drain, let cool, then crumble.

In a bowl, combine biscuit mix, bacon, cheese, salt and red pepper flakes.  Stir in cooked ground beef, add buttermilk and toss with fork until just moistened.

Shape into 1 1/2 inch balls. Place 2 inches apart on a parchment lined baking sheet.

Bake for 12-15 minutes or until puffed and golden brown. Cool on wire racks.

Serve with BBQ Sauce, Ranch Dressing, Cheese Sauce or any of your favorite condiments.
