Paula’s Recipes: Cranberry Relish
Some people make turkey for Thanksgiving and again for Christmas so here’s a recipe for cranberry relish.
2 cups of raw washed cranberries
1 peeled and cored tart apple
1 large whole (peel on) seedless orange, cut into sections
1 to 2 cups of granulated sugar (depending on how sweet you like your relish to be)
Chop cranberries in food processor (be very careful not to over pulse, or you’ll end up with mush) put in a bowl and set aside, chop apples, once again be careful not to over pulse, add apples to cranberries, chop orange (use entire orange, peels, pith and all) being careful not to over pulse, all fruit should be around the same size after chopped. Add orange to cranberries and apple, mix well, add sugar and mix again. Refrigerate.
Remember to make this a few days before you’ll be serving it. As it sits for a couple of days the sugar sweetens the bitterness of the orange peel.
